Grilled Corn

So yes, I know corn isn’t paleo.  But I get it every other week in my CSA and I really like it. I don’t really think my body digests it but eating it once every two weeks doesn’t seem to have any lasting effects.  It’s real food and it’s delicious.

I love this recipe and made it with this chicken and this salad.  It’s easy and kind of fun too.

Instructions
  1. Preheat the grill over medium heat.
  2. Melt the butter in a small dish
  3. Add the garlic and paprika to the melted butter.
  4. Brush onto the dehusked/prepared corn and place corn onto the grill, husks out.
  5. Close the grill while cooking the corn but rotate frequently to get and even cooking. Continue to brush the butter mixture on the corn as you rotate.
  6. Total cooking time is 10-15 minutes depending on how hot your grill actually it. Look for glossy swollen kernels and a golden coloring on the majority of the corn.

Do the de-husking outside to make it less messy indoors!

Husk down then de-silk it.

I use the husk to tie it around itself so it stays together.

Then you can work on the butter. I used a jar of garlic because I was feeling pretty lazy at this point.  Fresh is best!

Melt the butter.

Mix in the spices.

Then brush with goodness and put is on the grill!

Keep it closed while cooking!

Rotate (using those husks as a handle!) and brush with the butter mixture frequently.

That’s it!  Deliciously grilled corn!
