Not Just Another Beef Stew

Beef stew is probably one of my most favorite items ever. I made this recipe for my partnership with MyFitnessRx and when the episode airs where I make the stew, I’ll post it for all of you to see! (See other videos here!) With the snow that has been falling all week and the cold that I have been battling, I made this recipe again and it surely has not disappointed. I absolutely love white sweet potatoes which I prefer in both flavor and texture compared to traditional orange yams/sweet potatoes but you can use any variety that you like or can find.  Please though, don’t skip the final step of adding a splash of lemon juice to your bowl. It is the final touch of acidity that makes this stew really pop.

A flavorful and hearty beef stew for any season.

  1. If using an electric pressure that has a sauté function, everything can be done in the same pot. If using a slow cooker, I recommend sautéing and browning the ingredients first and then transferring them to the slow cooker.
  2. Melt the Ghee (or fat of choice) and add the onions, cooking until caramelized.
  3. Add the beef cubes and sauté until browned. (Transfer to slow cooker if using.)
  4. Mix in chopped carrots, celery, white sweet potatoes and diced tomatoes.
  5. Add spices, salt, pepper and then top with Kale.
  6. Pour broth over the top.
  7. Cook in the slow cooker on low for 8-10 hours or in an electric pressure cooker on manual high pressure for 45 minutes. You can do a quick release or allow to release naturally.
  8. Serve topped with a splash of lemon juice.
