Instructions
  1. Preheat oven to 425 degrees.
  2. Peel and chop all vegetables into approximately 1 inch cubes.
  3. Mix vegetables with 2 tablespoons (melted as needed) of your fat of choice.
  4. Season with salt and pepper.
  5. Place on a pan lined with parchment paper.
  6. Put in oven and roast for 45 minutes, or until fork tender, stirring occasionally.
  7. Sprinkle with lemon juice right before serving.
